“There’s a lot happening on this corridor of Leavenworth,” says Ellie Pegler, the head chef, baker, and owner of Farine and Four.
The relatively new bakery on the first floor of the Triangle apartment development specializes in all organic breads and pastries. Even the flour is made in house, milled from wheat and rye berries.
“The biggest surprise for most people is they don’t realize that flour isn’t shelf stable,” Pegler says.
Pegler says they’ll also soon get a giant mill for people to mill their own flour, much like grinding your own coffee at a coffeehouse.
