Elkhorn student in national cooking contest

Faith Iossi, a student at Spring Ridge Elementary in Elkhorn, is in the running to win a $30,000 cafeteria makeover for her school.

This fall, Faith and her family entered the Ben's Beginners™ Cooking Contest, a national contest which promotes cooking healthy meals at home. The contest asked parents with children in grades K-8 to submit a home video of them preparing a rice-based dish. Faith was chosen as one of 25 finalists. She's asking the community to help  her become one of this year's five winners. If chosen, she'll win $15,000 cash and a $30,000 cafeteria makeover for Spring Ridge.

Faith also plans do donate a portion of the winnings to the Food Bank of the Heartland's backpack program.

Faith's Recipe: Chicken and Rice Lettuce Wraps

Chicken tenders

Ingredients:

1 lb. boneless chicken breast tenders

2 packages taco seasoning

Cooking spray

Cooking Instructions:

Preheat oven to 425 F

Spray nonstick cooking spray liberally all over a baking sheet.

Season both sides of chicken tenders with taco seasoning

Bake 15-20 minutes - Turn halfway then until fully cooked (165 F).

Preparing Rice

Ingredients:

2 tablespoons olive oil

1 red pepper chopped

1 medium onion chopped

1 cup can black beans (rinsed and drained)

½ cup corn

1 package of Uncle Ben's Jasmine Ready Rice

2 tablespoons water

Salt and pepper, to taste

Cooking Instructions

Heat the olive oil in a skillet over medium-high heat. Add the onions and red bell pepper and sauté until soft (about 4 minutes). Add black beans and corn and cook for 2 to 3 minutes. Add Uncle Ben's Jasmine Ready Rice, 2T water and salt and pepper to taste. Combine and cook for 2-4 minute until fully heated.

Toppings

Fresh or jar salsa

1 avocado sliced

½ bunch cilantro chopped

1 cup shredded cheddar cheese

1 head of bib lettuce or lettuce of your choice

Fill each lettuce leaf with a scoop of rice mixture, chicken and top with avocado, cheese, cilantro and salsa.
