Chef says shop in bulk, freeze fresh

ELKHORN, Neb. (KMTV) — Shopping smart is essential now when we're all trying to limit our trips to the store. Paula Dreessen, Owner of Crème de la Crème Cooking School, suggests buying things in bulk and not shying away from the produce department. Everything freezes.

What should we buy?

“When I go into the store I get my produce,” Dreessen said. “I use what I can and freeze what I think I can use later. You want a couple nice lean proteins. Maybe some chicken, some fish, beans are a great thing to have on hand. It’s good to buy in bulk and have some basic things on hand that you can keep. I think if you do that you can get 2-3 out of them and freeze well.”

What can we freeze?

“One of the things that I've always done with fresh herbs is freeze them,” Dreessen said. “Preserve them. And then you just pull them out of the freezer whenever you need them. Even onions. People buy frozen onions. Just go, put them in your food processor and then get them in a freezer bag, lay them flat, freeze them and you have easy access when you need them.”

Now that we've stocked our freezer with fresh veggies and herbs, what should we make?

“The great thing about a stew is you can throw anything in there and it works,” Dreessen said. “You could do kale, carrots, onions, beans, corn. I mean whatever you have on hand. That’s why I mean soups and stews are great this time. And they freeze great!”
