OMAHA, Neb. (KMTV) — The folks at Over Easy want to make sure you get your morning off to a good start.
“I mean, the food is the best as far as breakfast is concerned,” said Bartholomew. “Over Easy is a contemporary breakfast restaurant in west Omaha with a drive-thru that has homestyle favorites, but also exciting new twists on breakfast.”
Those twists are what Bartholomew loves about this place.
“We do things like hash brown rounds, which are rolled up hash browns, bacon, cheese, salt and pepper and then we ball them up and fry them, almost like a hushpuppy,” said Bartholomew.
He started this restaurant with his dad nearly eight years ago. He was working in finance when he realized he'd rather be doing this.
“Just decided that wasn't where my passion was,” Bartholomew said.
Food is his passion.
“Our avocado toast starts with some multigrain bread, our house avocado spread, poached eggs and spicy dipping sauce on top of that. It's excellent,” Bartholomew said.
Chef Doug shares Bartholomew's zest for food.
“My favorite here is definitely the chicken and waffles,” said Chef Doug.
The chicken and waffles are also a customer favorite. Instead of traditional waffles, they use a Japanese bubble waffle. When it's done, it's topped with fruit and sriracha honey.
Another fun twist is their dutch baby pancakes. They also make homemade pop tarts.
Along with the fun appetizers, breakfast and lunch are served all day long and their drive-thru makes it convenient for customers.
Whether you come in or take out, Bartholomew is thankful for the support.
“We think that means the community loves us as much as we love them,” Bartholomew said.
